What is the Honey Process?

After harvest, coffee cherries are de-pulped to remove the outer skin, but—unlike the washed process—a portion of the mucilage (the sticky layer rich in sugars) remains adhered to the bean during drying. This detail is key, as the mucilage directly influences the development of sweeter and more complex flavors.

Types of Honey Process

·        Yellow Honey

Retains approximately 50% of the mucilage. Drying usually lasts between 5 and 7 days. Produces coffees with bright acidity, medium body, and balanced sweetness.

·        Red Honey

Retains about 75% of the mucilage. Drying is slower (8 to 12 days), generating more fruity profiles, fuller body, and more pronounced sweetness.

·        Black Honey

Retains almost 100% of the mucilage. It dries slowly, often in the shade, resulting in intensely sweet coffees, with high body and notes of ripe fruit or panela.
